Ginger is the rhizome of the plant Zingiber officinale . The plant can grow to a height of one meter. It is harvested nine months after being planted . The rhizome has branches of deciduous outbreaks arising out of the ground up .
The dried ginger is derived from a process of applying heat using solar dryers to reduce moisture content of rhizome 70-75 % to 10 %. Drying or excessive heating causes a decrease in the characteristic pungency of ginger, gingerol as the degraded.
The dried ginger should be stored in dark and ventilated areas to prevent rust and deteriorate losing their flavoring properties.
