After the black olives in brine has gone through a deboning process , it becomes mechanically rodajeado which managed by a qualified staff that is responsible for supplying the pitting machine that is the staff that performs both processes . The process involves crosscutting the pitted olive , the product obtained is packed with new brine to maintain texture and flavor.
In different presentations: flasks, sachet with disabilities and doypack , which are undergoing a process of pasteurization. Finished the process the product is ready to enter the market is national or international.
